
Reina's Easy Recipes Vol. 16: Miso Soup with Roasted Potatoes and Roasted Lotus Root
Here's an easy recipe from Reina featuring Oro del Desierto Organic Extra Virgin Olive Oil!
This time, we're making "Miso Soup with Roasted Potatoes and Roasted Lotus Root" using our Nouveau 1/10 (One-Tenth) olive oil.
Ingredients:
・1 potato
・150g lotus root
・2 tsp white miso
・600ml dashi (Japanese soup stock)
・3 tbsp sake
・1 pinch salt
・Parsley, as needed
・Oro del Desierto Nouveau 1/10, as needed
Instructions:
① Cut the potato and lotus root into relatively large pieces without peeling them.
② Heat oil in a frying pan, add the cut vegetables from step ①, sprinkle with salt, and grill them skin-side down over medium-high heat. The key is to avoid moving them too much.
③ Once they are nicely browned, add sake to burn off the alcohol, then add the dashi, reduce heat to low, cover, and simmer for 10 minutes.
④ After confirming the vegetables are cooked through, turn off the heat and dissolve the miso.
⑤ Serve in a bowl, drizzle generously with Oro del Desierto Nouveau 1/10, sprinkle with parsley, and it's ready.
