
REINA's simple recipe Vol.27 "New Onion & Asparagus Potage"
Introducing a simple recipe using REINA’s Organic Extra Virgin Olive Oil “Oro del Desierto”!
This time, we’re featuring a comforting spring soup made with the Arbequina variety:
“New Onion & Asparagus Potage.”
Ingredients
・New onions … 2
・Asparagus … 4 stalks
・Butter … 10g
・Milk … 200ml
・Shio-koji … 1 teaspoon
・Salt … a pinch
・Oro del Desierto Arbequina … as needed
Instructions
Trim the ends of the asparagus, remove the tough fibers, and cut into quarters. Roughly chop the onions.
Add butter to a pot, then add the vegetables from step 1. Sprinkle with salt and sauté.
Cover with a lid and steam over low heat for 20 minutes, stirring occasionally to prevent burning.
Blend until smooth, then add shio-koji and milk. Warm gently, pour into bowls, and finish with a drizzle of Oro del Desierto Arbequina.
