
REINA's Simple Recipe Vol. 16: Miso Soup with Roasted Potatoes and Roasted Lotus Root
Here's an easy recipe for "Oro del Desierto" organic extra virgin olive oil, brought to you by Reina!
This time, it's "Miso Soup with Roasted Potatoes and Roasted Lotus Root," using Novello 1/10.
Ingredients:
・1 potato
・150g lotus root
・2 tsp white miso
・600ml dashi stock
・3 tbsp sake
・1 pinch salt
・Parsley, as needed
・Oro del Desierto Novello 1/10, as needed
Instructions:
① Cut the potatoes and lotus root into slightly large pieces, leaving the skin on.
② Heat oil in a frying pan, add the potatoes and lotus root from step ①, sprinkle with salt, and roast them over medium-high heat, starting with the skin side down. The key is to not move them around too much.
③ Once they are nicely browned, add sake to burn off the alcohol, then add dashi stock, reduce heat to low, cover, and simmer for 10 minutes.
④ After confirming the ingredients are cooked through, turn off the heat and dissolve the miso.
⑤ Serve in a bowl, drizzle generously with Oro del Desierto Novello 1/10, and sprinkle with parsley. Done!
