
Refreshing Marinated Dish with Oro del Desierto
Here’s a recipe using "Oro del Desierto" Organic Extra Virgin Olive Oil!
It's a refreshing marinade, perfect for summer.
【Ingredients (serves 3)】
Eggplant ・・・ 1
Tomato ・・・ 1
Onion ・・・ 1
Carrot ・・・ 1/2
Garlic ・・・ 1 clove
Myoga ginger ・・・ 1
Oro del Desierto Olive Oil ・・・ plenty
Sushi vinegar ・・・ 3 tbsp
Salt ・・・ a pinch (to taste)
Black pepper ・・・ a pinch (to taste)
Soy sauce ・・・ a pinch (to taste)
【Recipe】
1. Cut the eggplant into bite-sized strips, the tomato into bite-sized pieces, thinly slice the onion, julienne the carrot, and finely mince the garlic and myoga ginger.
2. Mix olive oil and sushi vinegar in a 1:1 ratio. Season with salt, black pepper, and soy sauce to taste.
3. Add garlic, myoga ginger, and tomato to step 2.
4. Deep-fry the eggplant. Once golden brown, drain the oil and add to step 3.
5. Finally, add the carrot and onion to step 4 and mix well.
6. Done! It’s delicious fresh or chilled in the refrigerator.
It’s also great as a make-ahead dish!
